For a more sophisticated cupcake, I made Martha Stewart’s Tiramisu cupcakes. They were labor intensive but turned out delicious. The cake was dense and almost a little crunchy, much like a lady finger used in the traditional dessert. I substituted almond extract for a vanilla bean and I really liked the flavor. The marscapone & whipped cream icing held it’s form very well and was a nice change from the super sweet frosting I usually make.
