Vegan Cupcakes

Hello, happy Monday everyone!  I hope you all had a fantastic weekend!  There is something sad about a Monday and a new working week, but boy isn’t time flying fast at the moment, can you believe that in just a few weeks it will be Thanksgiving, then Christmas!  Two weeks ago my daughter was walking around with what she thought was the funniest joke ever, and that was that the supermarkets had filled their shelves with Christmas stuff.  She thought it was crazy seeing at that time Halloween hadn’t even been!

But now that it is November we are all starting to turn out thoughts to that time of the year!  We will bring you a heap of inspiration in the next few weeks so stay tuned!

Wednesday 3rd November – The earthquake in Haiti last January spurred many to donate and rase funds to assist.  Now as cholera sweeps the still devestated country Susana Molinolo has released a book ‘Cupcakes for Haiti’.  There are 30 different cupcake recipes included and all proceeds from the $20 book go to Doctors Without Borders and FINCA Canada.  The Cupcakes for Haiti cookbook, which features 30 cupcake recipes, costs $20 and can be purchased by emailing susana@gahan.ws or by calling 416-906-6037.

Thursday 4th November - Well if you have left over cupcakes, you could do what Leah Foster an artist has done.  She had more than a few cupcakes left over and has created an exhibit called Muffin Tops.  About 10,000 cupcakes have been strung together with fishing line and hang in curtains around the room.  Story and video at the Huffington Post.

Thursday 4th November - Cupcake Wars may have been won by a Vegan Cupcake, but it appears that the new vegan movement doesn’t want to stop at just cupcakes.  Winner Chloe Coscarelli a Los Angeles chef provides in the NY Times Blog reasons why you should think Vegan this Thanksgiving and offers up three great recipes including a Chocolate Pumpkin Bread Pudding for dessert.

Friday 5th November – Party Cupcake Ideas met Bakerella and got super inspired to create owl pops!  You can read all about it here, but the big news is that you can also score a copy of Bakerella’s new book.  Check out the details.

Saturday 6th – Montreal’s next Cupcake Camp has been organized for the 21st November says the Montreal Gazette.  The Camps which now are held around the world are a fantastic way for people to gather together, eat cupcakes and raise thousands of dollars.  Eva Blue the organizer hope this year to see more than 2000 people attend!

Winning Vegan Cupcake Recipes

A while ago, we brought you a list of amazing Vegan Cupcake recipes.  We included 25 recipes in our list from all over the internet, but there was one notable absence, and that was that we didn’t bring you any recipes created by Chef Chloe Coscarelli.

If you think the name sounds familiar, you are correct, Chloe was the winner of Cupcake Wars with her Vegan cupcakes.  She surprised many people not least the judges who were skeptical about the Vegan cupcake competing against the standard eggs and butter cupcakes.  Journalist Tara Parker-Pope traces Chloe’s journey in an article in the NY Times about not only cupcakes but the gaining popularity of Vegan Food that is not only good, but often better than our traditional foods.

So if you are keen to try some Vegan cupcakes that are quite possibly better than the competition, here are the links to Chef Chloe’s cupcake recipes. Most are on her blog but one is in VegNews:

25 Vegan Cupcakes!

Quite often in our 25 or 50 round ups we specialize in the decoration of the cupcake, what it looks like and how it can fit a theme, but this time we decided to look under the frosting to find you cupcakes that were vegan.

Because with these cuppies, it is what is inside that counts we have focused on bringing you recipes over design, however we have some of these too!  From numbers 1-20 below you can expect to find at least one recipe on the site to make the type of cupcake in the heading.  Enjoy!

1. Chocolate and Orange Cupcakes

Mmm I just love those chocolate oranges that you can buy, there is something about the combination of the two flavors which is simply amazing.  So one of our first cupcakes had to be the Chocolate Orange Cupcakes from Post Punk Kitchen.  This site has lots of vegan recipes for both cupcakes and other food, so if you are vegan it may be worth your while bookmarking it.

2. Cookies and Cream Cupcakes

At Chow there are a heap of great recipes, including this basic vegan chocolate cupcake recipe.  There is a section at the end, which gives the cookies and cream variation.  I’m all for variety and these look sensational!

3. St Patty’s Treat: Chocolate Stout Cupcakes

So this one is not a blog but a cooking site, but VegCooking is worth pointing out as there are so many recipes here and ideas.  These cupcakes in particular caught my fancy as they are a bit different using Irish stout.

4. Nitendo Power Vanilla Cupcakes

Okay, so this one is also a little different, they are Vegan Mario Mushroom Vanilla Cupcakes!  The design of these is pretty fun and would be great for a child’s birthday party.  These cupcakes are supplied by the Peta2 blog.

5. Vanilla Cupcakes with Tofu

I love the look of these fantastic vegan cupcakes!  Using tofu or soy yoghurt is a great way to make your vegan cupcakes a hit.  This recipe is a creation of the Wright Recipes blog so would be a great one to try if you are looking for a new twist on your vegan cupcake.

6. Green Chocolate Cupcakes

The Unquiet Mind Blog has taken her basic chocolate cupcake recipe from Chow (who we have linked above).  It is repeated on her website too, but she has added a touch of green coloring to the cake and the frosting to make these beautiful cupcakes.  Though I note that the flowers are probably not vegan, of course you can make these from marzipan.

7. Valentine Vegan Dark Chocolate Cupcakes

The Long Thread also provides a variation of the Chow cupcake recipe, where they modified the recipe to use dark cocoa powder instead.  This resulted in a dark almost black cupcake.  For the frosting she created the Chow recipe adding beet juice to give it color and flavor.

8. Alternative Vegan Chocolate Cupcake recipe

At Edible Crafts they have links to a number of cupcakes, but one in particular provides an alternative chocolate cupcake recipe to that supplied by Chow.  These are also beautifully decorated and come with the details you need to make the frosting.

9. Low Fat Vanilla Cupcakes with Choc Almond Frosting

Okay you have me when you say low fat and cupcake in a sentence!  These cupcakes from Miss Behavin look fabulous, and with a recipe for Chocolate Almond Frosting would be sensational!

10. Vegan Cupcakes Take Over The World – Review

So if you are interested in this Vegan Cupcake book, it is worth checking out this review from A Baked Creation.  It includes what they like about the book and who it is aimed for.  They clearly loved the book, and include some of the photos and recipes for you to try.  A number of our recipes listed here come from this great book, so if you try a couple and like them, support the authors by purchasing a copy.

11. Strawberry Topped Vegan Lemon Mini Cupcakes

Wow this cupcake looks way too good, it uses Coconut Milk Yogurt, lemon juice and zest to create the flavor base of the cupcake.  Dog Hill Kitchen has then topped these fluffy little cuppies with a mix of strawberries, sugar, corn starch and lemon juice.  These must make one of the ultimate summer cupcakes!

12. Vegan S’mores Cupcakes

It wouldn’t be a wrap up without at least one recipe from Cupcake Takes the Cake, so here we have the amazing S’mores Cupcake.  The recipe is from Vegan Cupcakes Take Over the World and is reprinted on their blog for you to try!

13. Fluffy White Cupcakes

Shmooed Food is all about encouraging people to eat in a healthier fashion, but this doesn’t mean no fun at all,  Jennifer’s cupcakes are a testiment to that!  These are light and fluffy, and have received very positive recommendations from her readers.

14. HEAPS of Vegan Cupcake Recipes

The All About Cupcakes Vegan page states early on that “Even vegans can’t live without cupcakes”.  Never a truer word has been stated, and after so many chocolate and vanilla ideas, this website provides a heap of alternatives such as gingerbread cupcakes, carrot cupcakes, mocha raspberry cupcakes, banana cupcakes and apricot and pumpkin cupcakes.

15. Vegan Strawberry Cupcakes

Madhuram’s Eggless Cooking blog has a number of great cupcake ideas, some of which are also Vegan.  These are classic strawberry cupcakes.  The site does include the recipe, which uses vinegar, but there is no frosting recipe.

16. Vegan Chocolate Ginger Orange Cupcakes

These divine cupcakes from The Kitchn are not only easy but look amazing as well.  There is a full recipe and instructions for both the cupcakes which feature ginger, orange and coffee, as well as the frosting.

17. Cupcake Wars winning Chocolate Strawberry Shortcake Cupcakes

These cupcakes are the very same as that which won Chloe Coscarelli of Chef Chloe the last episode of Cupcake Wars.  How can you beat a Cupcake War winning vegan cupcake!  Thanks so much to Red Velvet Stephanie for loading this for us all!

18. Vanilla Agave Cupcake

Are you getting the feeling that we are creating a collection of great recipes that originate from the Vegan Cupcakes Take Over the World cupcake recipe book?  This is another one that has been tried and loved by Happy Little Vegans blog.  The recipe looks divine.

19. Chocolate Banana Caramel Cupcakes

What a mouthful, but a delicious one!  These cupcakes from Bean Town Baker are a combination of recipes from Vegan Cupcakes Take Over the World that have been modified.  They look really great and I love the idea of having a slice of banana in the centre.

20. Margarita Cupcakes

Our final recipe is yes you guessed it from the popular Vegan Cupcakes Take Over the World.  This book has certainly taken over this list!  I love the look of these too, so fresh and light looking! These ones are from the Hostess Blog.

Decorating Vegan Style

The most common way other than creating Vegan Frosting is to decorate cakes or cupcakes with Marzipan.  Now Marzipan is often vegan but not always.  Some recipes use egg whites to make it.  But the best idea is to make your own Marzipan, and then you can go crazy! :)

21. Vegan Marzipan Recipe

Jeanna’s Kitchen have a great vegan marzipan recipe, so we thought that should be our first stop in the five decorating vegan cupcakes we have for you.  Once you have made your marzipan following her great step by step instructions you can then color it to make whatever creations you can imagine!

22. Valentine Cupcakes

At Vegan Cupcakes there are three different decorating ideas for Vegan Valentines cupcakes.  You could make these hearts out of home made marzipan to give your ordinary cupcakes a lift!

23. Ladybug Cupcakes

Adventures of a Super Wife created these Red Velvet Cupcakes from a recipe in Vegan Cupcakes Take Over the World.  She has decorated them in such a way to create simple but absolutely gorgeous little lady bugs!

24. Knitted Vegan Cupcakes

These are simply amazing looking cupcakes, the decorations are entirely made out of marzipan so are perfect for any vegan cupcake.  There is also a YouTube video on the Vegan Yum Yum blog showing you exactly how to make them.  Or if you do not like video check out the picture tutorial!

25. Marzipan Animal How To

At the Craft blog you can find this excellent tutorial to make marzipan animals.  The instructions state that you should use marzipan paste, but I couldn’t vouch that it is vegan so if you check the ingredients and it is not, substitute your own home made marzipan instead.
