Thanksgiving Cupcakes

Given it is the Tuesday prior to Thanksgiving, I thought I would run a little idea file for those of you who still haven’t decided on your Thanksgiving cupcakes!

First of all we have Pumpkin Pie Cupcakes from Hoosier Homemade.  You can get instructions on how to make these fantastic cupcakes over at the Hoosier Homemade blog.

Next we have a set of great cupcake toppers made suing three layers of paper.  These would look amazing on top of pumpkin cupcakes with an orange cream cheese frosting, or on top of a double chocolate cupcake.

Another idea is to create your own pumpkins on top of your cupcakes as Rebudesigns has done here.

And finally my last idea for this Thanksgiving has to be the Turkey cupcake.  These are from My Cake School.  This is a cool idea.  The website is packed with loads of information and video tutorials, but in order to get access to all of this information you must subscribe.  It is very cheap only $30 USD a year, and some of the creations the members make are just simply outstanding.

Blue Cupcakes with Purple Frosting

Have you ever wondered about how to create an amazing colored cupcake but avoid using any food coloring?  Well I will share with you a secret that was told to me by Hannah from the Bitter Sweet Blog.

You use a potato!

But not any ordinary potato, you grab a beni-imo potato.  These are generally around at this time of the year and with a bit of hunting you will be able to track them down.  They have a mild sweet flavor, that Hannah says is “somewhat akin to a pumpkin or sweet potato”, which means you can substitute these potatoes into any sweet potato or pumpkin cupcake recipe you have.

From looking at the pictures on the Bitter Sweet Blog I can see Hannah has created the cupcakes using the beni-imo potato, but on cooking it, the cupcake has gone a dramatic blue color, which when cut open has stunning green swirls in it.  The frosting however retains the vivid purple hue that is also contained inside the potato.

Five Pumpkin Packed Cupcakes

Today I really wanted to share with you what I have found on my search for interesting and cool pumpkin cupcake recipes.  I love pumpkin and it is so good no matter how it is served!

1. Pumpkin Cupcakes with Maple-Cream Cheese Frosting

It should come as no surprise to find another Smitten Kitchen recipe here for you!  This looks like a fantastic recipe and I love all the spices in the mix.  She also shows you how to make the roses on top of these brilliant cupcakes.

2. Pumpkin Pound Cupcakes with Cinnamon Brown Sugar Buttercream

My Kitchen Addiction is the source of our second pumpkin cupcake recipe.  This time it is a pound cupcake recipe with a gorgeous buttercream frosting.  They look heavenly.  To get in the spirit she even decorated the cupcakes with jelly pumpkins and used pumpkin wrappers!

3. Walnut and raisin pumpkin cupcakes with a white chocolate and cream cheese frosting

Wow this one sounds like a combination of amazing flavors, pumpkin cupcakes with walnuts and raisins, how good is that? Then topped with a white chocolate and cream cheese frosting. I am very intrigued by this recipe, which is from the Food Network but we found it on Cupcake Takes the Cake.  Apparently the additions, ie the walnuts and raisins can be switched with crystallized ginger and dried cranberries if you would like a more grown up version.

4. Cheesecake Filled Pumpkin Cupcakes

Okay, you may recall in the list of 25 Fall Cupcakes I included a Pumpkin Cheesecake Cupcake?  Well now I have a recipe for you!  The recipe actually comes from Rachael Ray Magazine and although it looks complicated it is really only the frosting (which you could sub for store bought stuff).  I love the look of these!

5. Dulce De Leche Pumpkin Cupcakes

Using a combination of recipes from Martha Stewart for the pumpkin cupcakes, to Recipe Girl for the Dulce De Leche and Joy the Baker for the Dulce De Leche Buttercream, the Sweetest Kitchen has created a new type of cupcake combination which is sure to satisfy even the sweetest tooth!  Recipes and links are provided on the site, check the comments for a link to the video tutorial on how to do the cone method.
