5 Buttermilk Cupcakes

Today I thought I would feature something slightly different, that is buttermilk!  It is an unsung hero in many peoples baking recipes, but an ingredient that once tried is hard to use over and over again.  Last time we cooked with buttermilk, we all had a go tasting it, and it was not so great, but the cupcakes turned out amazing and I found myself a convert!

So today I thought I would salute the hero of the baking world.. buttermilk…

1. Raspberry Buttermilk Cupcakes

These cupcakes from Bread and Butter started out as a Bill Granger recipe that was adapted to turn them into raspberry buttermilk cupcakes and then frosted with a sugar frosting.  The results look pretty good and apparently tasted great too!

2. Chocolate Buttermilk Cupcakes with Butterscotch Frosting

Butterscotch frosting is so drool-worthy, and these look great!  I love that buttermilk is so versatile that it can be adapted to any flavor you care to bake with!  These cupcakes are from Itty Bitty Kitchen.

3. Chilli Cinnamon Chocolate Buttermilk Cupcakes with Caramel Sauce and Chilli Vanilla Sugar

Wow this recipe from the Island of Dr Gateau combines so many of my favorite flavors, like vanilla, chilli and chocolate!  Yum, I am not sure though how they all combine, but it looks pretty amazing!  Admittedly these cupcakes look more like little puddings, but I don’t care, I am sure they would be like velvet to eat!

4. Chocolate Buttermilk Peanut Butter Cupcakes

I love the name of this blog, Ice Cream Before Dinner and they have a great cupcake for us, which is basically a chocolate buttermilk cupcake with a Reese’s Peanut Butter Cup Center.  Sounds good!  The only problem for me is that we can’t get much in the way of Reese’s products from our local supermarket here!  Oh well!  I may just have to make them without the centers!

5. Lemon Buttermilk Cupcakes with Ginger Cream Cheese Frosting

Very intriguing, but as it usually is on Bake and Destroy.  I love the idea of these cupcakes and am on a lemon kick at the moment!  They look delightful.

5 Tangy Lemon Cupcakes!

Lemons taste good year round, so today I decided to find five great tangy lemon cupcakes to share!

1. Lemon Cupcakes with Lemon Cream Cheese Frosting

As I like to do, I thought I would start today’s list with an all lemon experience in these gorgeous looking lemon cupcakes with lemon cream cheese frosting from My Baking Addiction.

2. Vanilla Cupcakes with Lemon and Whipped Cream

My next recipe also looks mouth-watering good, but this time it is a vanilla cupcake that is filled with tangy lemon curd, then topped with a thick whipped cream.  I can just imagine how good these cupcakes are to bite into with all that lemon curd oozing out!  These cupcakes are from Joy of Baking.

3. Lemon Cupcakes with a Lemon Swiss Meringue Buttercream

Yum, there is not much better than lemon buttercream on top of any cupcake!  These cupcakes from a Spoonful of Sugar combine a soft fluffy sponge like lemon cake with a big swirl of lemon buttercream on top!

4. Lemon Cupcakes with Raspberry Cheesecake

Oh wow how good do these sound?  They are quite simply lemon bottomed cupcakes topped with raspberry cheesecake!  I am going to have to make them, as A Dash of Sass says they are easy ;) and they look amazing too!

5. Lemon Meringue Cupcakes

I have made these myself and they are simply divine, and there is nothing quite like them (in my opinion)!  It is my fave recipe!  My version at home is self created, but in trying to find one that resembles my delicious creation I have happened across this cool cupcake on CakeSpy.  She looks pretty tasty huh!

Lemon Bar Cupcakes

These lemon bar cupcakes were served at our Mardi Gras New Orleans theme party this weekend. The recipe came from Real Mom Kitchen and we loved the idea and how the color yellow fit our Mardi Gras theme. I’ve always loved the lemon bars my grandma made for me as a child and thought these lemon bar cupcakes would be fun to try. If I recall correctly, she used a box of Sunkist Lemon bars and added powder sugar after they cooled off. My patience was always tested as I wanted to eat them straight from the oven. These lemon bar cupcakes are zesty and full of lemon flavor…both parents and kids loved them at our party.Tomorrow I will be posting our Mardi Gras King Cake cupcakes that are inspired from the New Orleans King cake recipe.

Lemon Bar Cupcake Recipe (makes 2 dozen cupcakes):

1 box of your favorite lemon cake mix
1 cup sour cream
3/4 cup water
3/4 cup oil
4 eggs
1 small package lemon instant pudding

1. Preheat oven to 350 degrees.
2. In a large bowl, mix together dry ingredients.
3. Add wet ingredients and mix together for several minutes.
4. Lemon bar batter will be fairly thick in consistency.

Bake cupcakes at 350 degrees for 20 minutes. When you remove the cupcakes to cool, you might notice that the cupcakes are indented in the middle. This can be smoothed out when you add your lemon bar buttercream frosting.

Lemon bar cupcakes without frosting

Lemon Bar buttercream frosting:

1 cup (2 sticks) soft butter
6-8 cups powdered sugar
1/2 cup fresh lemon juice
1 teaspoon grated lemon zest (peel)

1. Use a large mixing bowl and add soft butter.
2. Add 4 cups of sugar
3. Add lemon juice and the zest (peel).
4. Beat until smooth and creamy.
5. Gradually add the remaining sugar (1 cup at a time) until icing is thick enough to spread over lemon bar cupcakes.
6. Store at room temperature.
