
Rachel H. shares her Peruvian record cupcakes she made for her boyfriend’s 30th birthday. Her boyfriend works in the music industry as an audio engineer and these record cupcakes must have made a big “hit” with him
Cupcakes:
1 cup boiling water
1/2 cup unsweetened coco powder
1 1/3 of all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 cup of sugar
2 eggs
3/4 tsp vanilla extract
Buttercream:
3-4 cups confederate sugar (for chocolate add 3/4 cup of coca)
3 tsp butter
1 tsp milk
Records:
1 cup Peruvian chocolate chips
1/2 cup white chocolate

Pre heat oven 350
Cupcakes:
In a small bowl whisk boiling water over coca until smooth. Set to cool.
Medium bowl sift flour, baking soda, baking powder and salt.
Large bowl cream butter, whisk in sugar until fluffy, beat in eggs on at a time. Mix in vanilla. Add dry ingredients slowly and coca mixture.
Bake 20 min or until cakes are spongy in touch.
Records:
Melt chocolate and vanilla chips in separate bowls over hot water, stir until a liquid consistency. Pour onto flat surface over wax paper. Place in refrigerator until lightly cooled. With a circle fondant cutter cut large circles and in the middle a small circle in chocolate and small circle in vanilla chocolate. Place vanilla circle in middle of chocolate circle, poke a whole in middle of vanilla with a writing piping tip. Place in frig to harden and cool.
