Kim writes….I was inspired by these penguin cupcakes found here- but since these were for kindergartners, I wanted to make them more playful.
Ingredients:
Marshmallows (for body and belly)
Strawberry gummy drops (for head)
Candy corn (for feet, and yes Walmart carries candy corn year round!)
Tictacs – white and orange (eyes and beak)
White sugar crystals (belly)
Additionally, I had a block of styrofoam and kabob skewers to aid in the dipping and drying…
First – don’t try and make black chocolate by dying white chocolate with black icing – you’ll get gray (both in your hair and in the bowl!)… I finally took dark chocolate melts and added purple dye (yep, used up all the black on the first sentence rofl) and melted in a double boiler on the stove. Dipped a whole marshmallow that was on a kabob into chocolate, dip the head separately, then attached. Cool in freezer – then cut a marshmallow and dip the sticky side into sugar crystals and attach to belly using some of the melted chocolate.
Once dry, attach candy corn with chocolate for the feet. Now the tricky part! Using a razor blade (I used one with a handle) cut the tips off of the white tic-tacs and use for the eyes (careful, those suckers will fly!!!) and then cut just one tip off the orange ones and use for the beaks (attach with chocolate).
Final touch – add one dot of chocolate to each “eye” for an “eyeball”… it’s so cute to see them all have a different personality! The kids went crazy and loved biting their heads off *gasp* rofl….
