I am slowly exploring my way through the autumn or fall flavors, and today I thought I would check out the carrot!
I have to admit that the carrot cake was quite a discovery for me. You see until I was in my first year in high school, and about 13 years of age, I didn’t realise that cakes could be anything other than vanilla, butter, chocolate etc. I would never have dreamed of making a cake using vegetables, and even then after grating carrots, measuring spices and crushing the nuts I was still convinced that the cake would taste like boiled carrot.
However I loved it and demanded that mum serve all our carrots from hence forth in the form of cake. Needless to say she didn’t comply, but I made the cake again quite often and expanded my experimentation to other vegetables and fruits such as bananas. Revolutionary, I know! hehe.
Anyway today I pay homage to the carrot and here are some of the best around!
1. Traditional Carrot Cupcakes
These cupcakes are traditional because they are just carrot. Well I say that, but you know it is not true, these cupcakes are deliciously moist and feature desiccated coconut in them. They also contain raisins or currants and crushed pineapple! Plus I totally adore how the Cupcake Project have decorated these carrot cupcakes. They look fantastic!
2. More Traditional than my Last Traditional Carrot Cupcakes
These cupcakes from Pink Parsley Catering are gorgeous and use a recipe that I would consider pretty close to that which I made at school I would guess that the ones above with pineapple in would be slightly sweeter and moister, but I can’t go past one that
3. Tangerine mini Carrot Cupcakes
I absolutely adore the look of these little cupcakes from White on Rice Couple. This is a blog that I haven’t previously visited before but it is worth a trip for the stunning photography and of course these wonderful cupcakes. They feature tangerine juice and zest in the cupcakes and also are topped off with a tangerine cream cheese frosting.
4. Carrot Ginger Cupcakes with Orange Frosting
This one is from another blog that I haven’t previously toured. It has a fantastic name too, Chubby Hubby and the byline is Whining, Dining and Marriage! Ha I love it, totally true! Anyway to the cupcakes at hand and this is actually a Martha Stewart cupcake recipe and her review is pretty good! Why not try the recipe out for yourself?
To wrap up the five this week, in my quest to find cool recipes that are different and unique I have found one that instead of using pineapple, uses apple. This is from Big Black Dog and is quite a traditional carrot cupcake recipe. I love her decorations!

oh. These are really cute cupcakes! I love the carrot cupcakes! The design is cute. Thanks for sharing this one. I just want to commend all of the recipes here. I think I should try this out. My kids will definitely love the carrot and apple cupcakes. Plus, they are all nutritious!
