Today I felt in the mood for coconut. The best ingredient for snow decorations around! But lets see what you can create in a cupcake!
Straight off the bat and we are mixing fruits with coconut to create a pretty fancy looking cupcake. These are from Not Quite Nigella, and rolled in chopped almonds, frosted with cream cheese frosting and topped with raspberries, they look pretty amazing.
The classic coconut cupcake, aka snowball cupcakes. They look stunning, but these are more for your ‘little’ bit of coconut, than the full coconut cupcake experience. The cupcake and frosting are not infused with coconut, just the top, but they look great and from all reports they taste great too. These are from the Joy of Baking.
Well, you know I love a good vegan cupcake recipe! This one is from Katies Kitchen and is from another website. These use coconut extract in the cupcakes and the frosting. You can decorate as Katies Kitchen has done with more shaved coconut or go for a different topping if you like.
4. Chocolate and Coconut Cupcakes
Sweet Paul has some of the best looking cupcakes around and how can you resist these. Coconut chocolate cupcakes topped with none other than… ice cream! YUM
5. Lemon, Coconut and Poppyseed Cupcakes
Last, but again in no way least these are very gourmet! They mix the flavors of lemon, coconut and poppyseeds into a beautiful looking cupcake. Using sour cream and buttermilk in the recipe, I am pretty sure they would taste very good!
Top with good old fashioned buttercream frosting with a tablespoon of lemon to add the extra zest! Thanks Le Delicieux for these!
